Plantains. My latest healthy treat. They serve them at a favorite restaurant of mine called Rosalinda’s in North Little Rock. Tiny hole in the wall but like most of those amazing food.
You can get plantains at most regular grocery stores. I get mine at Kroger. They are sweetest when the peel is entirely black but don’t make the mistake they are past their prime like their relative the banana. They won’t be overly mushy.
Heat oil. I like olive oil but usually mix in canola because you want about a fourth of an inch in the pan.
Slice and sprinkle with salt and sugar. I like the combination of these. It satisfies both cravings.
Cook plantains in the oil for about 5 minutes on each side.
Then your done.
Here they are with yogurt and honey.
