The thought of dinner during the summer can sometimes be a daunting thought. No one wants to heat up the kitchen to cook. This is when I love gathering simple ingredients from the garden for our evening meal.
Each evening there are cucumbers hanging from the vine like little green jewels and a rainbow of tomatoes just waiting to be picked. And the basil is as high as a 3 year old’s eye. I’m filling bags with okra for pickling and frying. And the squash just hasn’t quit. In fact its been showing out as of late. I’ve already made a batch of zucchini bread and pickles.
There’s so much bounty in the garden at this time of year and the simple act of slicing creates a tasty dinner.
Our chickens are doing their best to fill our refrigerator with their yummy fresh eggs as well. So I’ll fried an egg, slice some of my heirloom tomatoes and crunchy cucumbers, and toast some bread.
It’s a simple meal from the garden that’s healthy and fills me up. And more importantly I didn’t heat up the house.

That sounds yummy. I love eggs and haven’t bought one from the store in a couple of years. In fact, I have them delivered straight to me at work via a co-worker or a friend who has a farm. Can’t beat that, eh?
And to have a fried egg and fresh-from-the-vine tomatoes for dinner? HEAVEN!
